Banana Chocolate Cupcakes
Have some old bananas you need to use up? Try these whole wheat, Greek yogurt, Banana Chocolate Cupcakes! You can top them with Greek Yogurt Frosting!
Makes 12.
Ingredients:
3 bananas mashed
1/4 cup greek yogurt
1/4 cup hot water
1 tsp vanilla
3 eggs
1 cup honey or sugar (you can also try sugar substitutes)
1/2 cup cocoa
1 1/2 Tbsp vinegar
1 1/2 cup whole wheat flour
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup chocolate chips
Directions:
Preheat oven to 350. Mix together bananas, greek yogurt, hot water, vanilla, eggs, sugar, cocoa and vinegar. Next add dry ingredients. Add chocolate chips last.
Bake for 18-20 minutes.
