My dad makes delicious whole wheat bread, but in mass quantities, I adapted it to make 2 loaves, and fine tuned it a little bit. This bread is amazing! You can even make it Artesian if you want to! Also take a look at this HONEY whole wheat recipe that is awesome!
Ingredients:
5 1/2-7cups whole wheat flour
2 cups warm water
5 tsp yeast
2 tsp gluten
2 tsp dough enhancer
2 tsp salt
2 Tbsp olive oil
2 Tbsp sugar or honey (optional, you can subsitute this out if you want to make it Artesian....... 2 tsp pepper, 3 cloves garlic, 1 tsp parsley, 1 Tbsp dried rosemary or 3 Tbsp fresh)
egg beaten (optional for brushing accross the top to give it a golden shine)
Directions:
Combined water, gluten, dough enhancer, salt, olive oil, sugar, and stir. Then add flour and yeast (add last one and half cups of flour slower, until tell you get to the right consistency). Knead for 6 minutes! Then let it raise for 30-40 minutes and punch down, roll it into two loaves, cut 4 cuts into the top and brush with egg. Then let it raise until you get it as big as you want to and place it in the oven at 375 degrees for 25 minutes! AMAZING!
